Lavish, decadent and perfect for grand celebrations are the novel Lobster, Sea Urchin, Hokkaido Scallop, Salmon, Tuna & Caviar Yu Sheng (喜笑颜开 (至尊鱼生捞起)) (Large: $268++); Mini Abalone & Crispy Fish Skin Yu Sheng (轩鹤冠猴 (千孙鲍鱼捞起)) (Large: $158++, Small: $88++); Sea Urchin, Tuna & Crispy Fish Skin Yu Sheng (豪情壮志 (吞拿鱼海胆捞起)) (Large: $158++, Small: $88++). Instead of the traditional sauce, guests are pampered with a choice of Kumquat Sauce. Sweet yet refreshing and zesty, Kumquat sauce, which symbolises abundance and good fortune excites the palate with a sweet yet refreshing and zesty kick. That’s not all, crispy fish skin is added to the Yu Sheng for that gratifying crunch and texture.

With its indulgent amalgamation of 13 luxuriant ingredients served in a festive casserole hot pot, this delicacy is not only steeped in auspicious symbolisms, it boasts the ultimate in taste, presentation and collagen.
